Radish Quinoa Salad with Fresh Mint

1 bunch of red radishes, about 1 1/2 cups finely chopped

1 small onion or green onions, chopped, about ½ cup

½ cup finely chopped mint

½ cup chopped fresh parsley

2 cups cooked, chilled quinoa

2 Tbsp. fresh squeezed lemon juice

3 Tbsp extra virgin olive oil

Salt and pepper to taste

Finely cube the radishes into small pieces.. Place the radishes, onion, mint, parsley and quinoa in a small salad bowl. Add the lemon juice, olive oil, salt and pepper. Toss gently. Taste and adjust seasoning and dressing.   Loved this salad on a bed of greens with roasted chicken.
